Healthy Mexican Food Dish: Chicken Avocado Tacos

This healthy Mexican food meal makes for a tasty, low prep time, breakfast, lunch, or even dinner that is high in protein and omega-3 fatty acids, but still moderate on the calories. Even with the side of cauliflower rice it still clocks in at less than 600 calories.


It contains avocado which is one of the most nutrient dense fat sources you can find. Avocados are high in potassium and fiber which can improve cardiovascular health and digestion. These tacos are high in protein so they can help give you the nutritional fuel you need to build muscle and add tone, and they are very filling. They also have plenty of veggies making them a great source of vitamins and minerals, as well as very satiating.


Ingredients:

2 Laughing Cow Cheese Spreads (the spicy one goes great with these)



Preparation Instructions:

  • Pan fry or air fry the chicken breast tenders

  • Add taco seasoning to the tenders as they cook, make sure they are browned on the outside and have no pink in the middle before taking them off the burner/fryer

  • While the chicken is cooking heat up the corn tortillas in a pan

  • Once the tortillas are nice and warm, take them off the stove and spread the laughing cow cheeses on them

  • Next add the chicken breast tenders to the tortillas

  • Then add the beans, lettuce, avocado, and fajita veggie blend, to the tacos

  • Top with a dollop of greek yogurt, some pico, and picante sauce

  • Enjoy!

This simple recipe only takes about 20 minutes to make and is incredibly healthy and delicious. It is also calorie conscious, coming in at under 600 calories even with the side of cauliflower rice. Hope you love it!
